fat free?....not likely....

Until today, I have been thanking a good friend in Brisbane (Hi Shan!!) for giving me this recipe for what she calls 'Awesome Biscuits'..... Now I am onto my fourth batch, I'm not so sure I should be thanking her at all! My hips sure aren't!
They are indeed 'awesome' and 'tempting' and 'moorish' and 'delectable' and just plain 'yum'!
Best of all (or worst depending on your point of view and current dress size), they are ridiculously easy to bake.
So, I am spreading the word and the nasty saturated fats to one and all.....enjoy.


Shan's Awesome Biscuits

1 medium jar of Peanut Butter (make it a good quality one) crunchy or smooth

1 cup Caster Sugar

1 Egg

1 cup Choc Bits



  • Preheat oven to 180 degrees


  • Mix all ingredients thoroughly (I sometimes warm the peanut butter in the microwave to help remove it from its jar - this also means the chocolate will melt through the batter)


  • With flour coated hands, roll into small to medium sized balls and place onto paperlined baking trays - press with a fork


  • Bake for 10-15 minutes - try to get the bottoms lighlty brown for that yummy roasted peanut taste


  • Cool for few minutes on trays before moving to cooling racks

yummy, yummy, in my tummy....

Can you believe it?
Easter.... it's here...again!!!
It has come around quickly this year and hubby and I find ourselves caught out - no plans, no eggs, no sentimental easter cards with bunnies on them....
But I feel I may just have redeemed myself with these little beauties!
Called my Mum yesterday (as you do in situations like this) and asked for a recipe for some chocolate goodies - she came back with this.
Nice and easy, a one bowl recipe, my kind of cooking!
Chocolate Balls (of Joy)
375g Chocolate (I used Milk, but Dark would be yummy too!)
80g butter, cubed
1cp Fruit Mince (I'm not a fan of Fruit Mince, so I chopped up dried Apricots, Prunes and Cherries)
1/2cp Almonds, chopped (I used whole Almonds, but I think next time I will used slivered and maybe toast them too)
Coatings (I used cocoa, coconut and toasted sesame seeds)
Melt chocolate over a double boiler, add in butter one cube at a time and heat till smooth
Add in chopped nuts and fruit and mix well
Allow to cool for 1 hour
Roll into small balls and coat
Leave to cool and ENJOY!

The finished product.... I have been doing some quality testing and I can say from firsthand experience.... YUM!!!

Titillating Toscakaka!

No.. I'm not swearing at anyone.. a Toscakaka (Tosca Cake) is a traditional Swedish cake and I came across a recipe in Sunday's Examiner newspaper. Was feeling a bit domestic and so gave it a shot... OMG!!
For a very simple cake, the result was very, very yummy!!!
Here's the recipe should anyone wish to treat their tastebuds! The topping is particularly tasty!
Tosca Cake
100g unsalted Butter
2 large Eggs
150ml Caster Sugar
200ml Plain Flour
1 tsp Baking Powder
50ml Cream (or milk if prefered)
(Topping)
100g Butter
100ml Caster Sugar
2 tbspn Plain Flour
2 tbspn Milk
100g Flaked Almonds
- Grease and flour a 24cm round springform tin
- Preheat oven to 175 degrees
- Melt butter and allow to cool
- Beat eggs and sugar till pale and fluffy. Combine dry ingredients and stir into egg mix, along with melted butter. Mix well
- Pour into pan and bake in lower part of oven for 20-25 mins
- Prepare the topping. Combine everything in a saucepan, heat and stir well until butter melted and mixture thickens
- Once cake is cooked, spread topping over top and place back in oven (moving up to middle rack) for further 15 mins, or till topping is golden and a little caramelised

The quantities of the dry ingredients are shown in mililitres - this is a European method of measuring volume and isn't a typo. I measured them out using a glass measuring jug.
